When the grapes reach full maturity, the long-awaited moment finally arrives: harvest time.

The exact date is determined through careful monitoring — analyses and grape tastings that help us capture the perfect balance. Each year, from September to mid-November, the harvest brings a mix of uncertainty, excitement, and immense satisfaction. With the same rigor and attention to detail, we then guide each step of the winemaking process. For several years now, we have chosen to vinify each plot separately, allowing every terroir to express its most authentic character.

From October to February, we carry out regular tastings and analyses of every tank, ensuring that nothing is left to chance. Then comes the moment of blending, a key stage in which each wine is shaped to reflect our work, our personality, and our deep passion for this land.

In March, we bottle our wines — the final step before proudly presenting the new vintage.
